Caprese salad

This Mediterranean salad, very popular all over the world, has its origins in the island of Capri in Italy. Contains fresh mozzarella, tomatoes and fresh basil, being a light, fresh and flavorful salad. It is very suitable for any time of the day, you can eat it as such or with some grilled vegetables. In addition, its preparation takes only 10 minutes.

ingredients

  • 500g fresh mozzarella from cow's milk or buffalo
  • 8 large tomatoes
  • 80g basil leaves
  • 40g pine seeds
  • 2 cloves of garlic
  • 100g parmesan
  • 100 ml of olive oil

Method of preparation

Cut the tomatoes into suitable round slices (not very thin). Cut the mozzarella into slices of the same thickness as the tomato slices. Place them on a plate, alternating the tomato slices with the mozzarella ones. Add pesto sauce on top.

Pass the basil leaves through a quick stream of water, then drain on an absorbent napkin. Mix in an electric mincer or food processor the basil leaves, pine seeds, garlic cloves and parmesan, then gradually add, little by little, the olive oil.

Today I bring to your attention caprese salad with tomatoes and peaches, a reinterpreted salad starting from the classic salad with tomatoes and mozzarella to which we added slices of sweet and juicy peaches.
It is made extremely easy and can be enjoyed at any time of the day !!

Caprese salad with tomatoes and peaches - ingredients

  • for 2 servings
  • 250 g fresh mozzarella -Delaco
  • 3-4 yellow and red tomatoes
  • 2 peaches
  • 2 tablespoons pesto sauce
  • a tablespoon of honey
  • juice from a lemon
  • 2-3 tablespoons olive oil
  • balsamic vinegar cream
  • fresh basil leaves

How to prepare caprese salad with peaches

Choose ripe, sweet and fragrant peaches and slice them as thin as possible.
Tomatoes are also sliced, it is preferable to use garden tomatoes because they are tasty.
Fresh mozzarella is cut into equal slices.
Pesto sauce is mixed with honey and lemon juice.
After we have prepared all the ingredients, all we have to do is place the salad on the plate.

Alternately place the tomato slices, peach slices, fresh mozzarella and basil leaves.
Add the sauce formed on top and then sprinkle with a little olive oil and drops of balsamic vinegar cream.
The seasoning is done according to everyone's taste, I preferred to add balsamic vinegar cream because I like its taste.

Caprese salad

Although you would expect this simple and well-known salad to be of peasant origin, Italian culinary history tells us that it is not so.

The place of birth of this salad is certain, the author uncertain. The tomatoes used in the "original" recipe should be of the "ox heart" variety, you know, the big, sugary and irregular ones. Mozzarella is said to be made from buffalo milk. If most of the time I am slightly stiff, in this case I consider that no impediment has the right to stand between you and your Caprese salad.

I conclude: tomatoes should be good, sweet, fragrant, without many seeds. Mozzarella to be of good company. I hope you understand that when I say mozzarella I mean the one in liquid, not the one in the form of a stick which is an "innovative" product only for the "pizza industry". If you don't like basil, although it makes a lot of sense here, you can also eat it. The oil must be olive and exceptional, but not Made in Italy.

Although I don't "discriminate" in terms of cheeses, this mozzarella is a bit bland, it doesn't have much taste. A different Caprese salad

Preparation time: 20 minutes

Salad ingredients:

- 3 tablespoons of extra virgin olive oil

- 300g of cherry tomatoes, cut in half

- 100g of mozzarella pieces

Ingredients for pesto dressing:

- 2 coats of fresh basil leaves

- 100 ml of vegetable soup low in sodium

- 2 tablespoons extra virgin olive oil.

Method of preparation:

1. Cut the tofu into 4, then put the pieces in a towel, place a wooden chopper on top and press them using your body weight.

2. Cut tofu cubes. Heat the oil in a non-stick pan over medium heat, then add the tofu and salt and let the pieces cook until golden (about 15 minutes).

3. While the tofu is cooking, prepare the pesto sauce by mixing the basil, garlic, salt and pine nuts in a blender. Mix everything until the ingredients are finely chopped, then slowly add the vegetable soup, while the blender is running and then the olive oil, while it is working.

4. Mix the tomatoes with the mozzarella, fried tofu and baby spinach in a large bowl. Add the pesto dressing and the Caprese salad is ready!

This recipe for Caprese salad it has only a few ingredients in addition to the usual one, but we guarantee that they give a special flavor to the dish that goes great on a hot summer day!

U ovom koraku pa nadalje možete uključiti svoje malene jer nema više baratanja noževima. :)

Umiješati kuglice mozzarele u pesto genovese i staviti ih u džepić.

Ako pripremate ovo jelo dan ranije. Nakon koraka tri pohranite svoje punjene cherry rajčice u hladnjak. Te ih začinite prije posluživanja.

Tako punjene rajčice slagati na pladanj za posluživanje. Meni najljepše izgleda da kad su na velikoj drvenoj dasci. A mogu se slagati i jedna na drugu u toranj.

Posoliti i začiniti svježe mljevenim paprom. Ravnomjerno začiniti maslinovim uljem po izboru, te začiniti s balsamic cream (drže je veći dućani). Concentrate on okusa, kiselo-slatkog, ali se ne razlijeva kao Aceto di balsamico, te stoga je bolja za vizualni izgled i okus samog jela.

Posoliti, zapapriti svježe mljevenim paprom. Ravnomjerno začiniti maslinovim uljem, i pokapati s kremom di Balsamicom. U ovakim jelima, krema di balsamico je prigodnije jer ne razlijeva i ljepše izgleda na pladnju.
